I did not have corn, so I just made the recipe as stated with out it — and I still loved it!

I enjoyed my enchiladas with a avocado relish dish! Super easy to make I cut up an avocado, some tomatoes, onions, garlic, and half of lemon (i wish i used half of a lime instead) salt, pepper, garlic powder and one fresh diced jalapeño! Put in the in fridge for 30 mins and enjoy with anything!!! (An avocado relish!)
I was tooooo lazy to put the bottom one in the oven, so I made just like the ones up top, except I microwaved this plate for one minute with the enchilada sauce (I loved it just as much)!Try this recipe out! Tell me what you think! It’s SOOOOO EASY, and generically good! I promise you’ll love it
Being in school & making a fresh dinner do not go hand in hand all the time, but last night after coming back from the gym, and, having only a few ingredients on hand, I decided to try out Laura’s chicken quesadilla recipe — and I seriously lovedit! It was truly simple, and required NO PREP work!
I do not know Laura, but I love subscribing to her, she has so many great recipes on her YouTube channel! I’ll try to review all the recipes I make, and tell you how I’ve manipulated them.
P.S. Just made this for lunch, except this time I made a little change. I wanted to add black beans in to make it more filling (and so I could add less cheese). In order to do this I took a can of organic black beans which were in water (NO SALT), drained them and then cooked them on medium heat for 5 mins. I seasoned them with garlic powder, paprika, salt, pepper, & chili flakes (you could use a forth of a packet of taco seasoning). After mixing it all together I placed the contents into my magic blender with 4 tablespoons of salsa and pureed it! Next, I placed 2-3 spoons of the mixture on my tortilla and spread it out with a knife, then placed my chicken and cheese on it & heated it over the stove for 2 mins on each side on medium heat (just make sure the cheese has melted)! Viola — it’s DONE!

I absolutely love picnics! They’re my favorite part of the spring and summer season. I just went on one yesterday– the weather was in the high 70’s, a little windy, great company & not to crowded. I couldn’t have been any happier. We enjoyed drunken goat & manchego cheese, a baguette, curried chicken salad, & tiramisu!
All of the treats were from Alon’s! The tiramisu was perfect: light, not to sweet, and an awesome mixture of flavors.
